Seared Sea Scallops Mediterranean

Seared Mediterranean Sea Scallops
Serves Four, Cook Time 10 minutes
1 tub Butter Cuisine Mediterranean Butter.
16 pieces large Sea Scallops.
Pinch to taste Salt &Pepper mix (50/50 ratio).
2 tsp. olive oil.
1 Lemon cut into quarters.
8 oz. rinsed baby spinach.
Rinse and pat Sea Scallops dry in a paper towel.
Season with Salt and Pepper mix.
Heat a non-stick skillet until very hot add the olive oil
Carefully add the scallops to the hot oil, and sear for 2 minutes per side, turn and cook for 2 minutes.
Discard the oil, swirl in Butter Cuisines Mediterranean Butter, on low heat.
In another pan wilt the spinach, season with Salt & Pepper stir, and divide the portion onto 4 plates.
Place 4 scallops on top of the spinach and drizzle the butter over each plate then garnish with lemon wedges.
Serving Suggestions: Serve with pasta that has been tossed with shaved Parmigiano Regina cheese, a glass of crisp Pinot Grigio.
